Jedi get more aggressive when they're angry. It probably makes them a bit better in that fight, but it certainly makes them more likely to make offensive moves like cutting off limbs. The core of the difference between Jedi and Sith is that Sith conflate martial prowess with power (which is tied to things like aggression) while Jedi equate control with power. It takes more effort to win single skirmishes with Jedi power (i.e. balance, defense, patience) than it does with Sith power (i.e. agitation, offense, haste) - but as the Bear said, "offense sells tickets, defense wins championships" - in the long run, the Jedi's power wins out, which is why they try not to simply harness aggression every time they fight (that and the Force-specific property of anger leading to an addictive relationship with the Dark Side).
