Sorry, this is probably a noobish question, but how do I do this? Do I have to reUV the entire thing manually or what?

Open up your model's polymsh in the ModExplorer window. Expand it, then expand "Polygon Mesh," then expand "Clusters," then expand "Texture_Coordinates[_AUTO]." Do you only see one "Texture Projection?" You're ok.

It's rare that you're going to find a model that you made with more than one texture projection unless you specifically made it that way. If you do have more than one, you will need to delete one of them and reapply whatever materials you need to, but one texture projection =/= one texture and usually that is what people are thinking.
