SWBF2 already supports a large number of resolutions, soft shadows, and bloom. Any further visual enhancements would have to be done on the actual models.

Some of those things are enabled by default in SWBF2, some aren't. Basically doing what you want would require re-exporting every single model to update the game. And the engine just isn't as efficient as GTA or other engines. If you went through and did that you'd up the minimum requirements by quite a bit.

Basically it can be done. But it's an insane amount of work that would take at least a year for a group of dedicated modders to do, if not more. It wouldn't be a simple "turn on these graphics options" thing.

Also, why in that picture does everything look great except for the actual models (which look horrible)? Personally I wouldn't want the visual upgrade without model upgrades too.

Also, to make graphics even more realistic, I recommend setting the anti-aliasing option to 4x.

BF2's engine will never be as good as the crytek or the GTA engine but you have to remember those engines weren't meant to handle the size of battles that BF2 can handle. BF2's engine I would compare almost to a RTS engine than anything else but with FPS capabilities. For the quality and size of the battle BF2 can handle I have to say that the quality of graphics is very good considering IMO Pandemic didn't do a good job with the pure level design in many of the maps
