Also don't forget the CHUNK pieces of all vecs and droids, as well as buildings. They are damaged and destroyed pieces of ships and droids that if used properly can become props.
In ARC: Jabiim I have gunship hulks, and in the Hypori map I created all kinds of cool props out of AAT pieces and stuff...
Remember to look deeper into the assets than what you can easily see.
CHUNK models even draw from vec MSH textures.
You just need to be slightly ODF savvy to use them properly.

The Hangar in Mos Eisley has the sail Barge, which if look at the bottom has the engine in pieces underneath it. Rends made (I think, not sure) a wrecked X-Wing and Rebel Transport. Dune Sea and Jabba's Palace have a lot of broken droids, and you could use the Sandcrawler (it's actually an ancient Corellian ore miner brought by settlers), which is actually the crawler destroyed by the Stormies in Ep4. The Faclon could be partially buried, and Psych0fred made some fallen AT-ATs whcih can be found in his Chain Isle map (everything from that map can be downloaded seperately in a source pack called "datachainisle.zip"). I'll post the link if you want it.

What i did for my map (i tired to do it but couldn't continue...) is i made a texture on Adobe Photoshop and then saved it as a TGA named something like rhen_var_6.tga (don't remeber exactly.) Then i put it in the world 1 folder of my map and then just used it...
PS: I might have missed something since i did this a long time ago, but i think this is how you od it
