This can be done on Steam. Library > Star Wars Battlefront II (Right Click) > Properties > Set Launch Options > /resolution 1366 768

Many of the placements become incorrect. Text is moved around, boxes, icons, etc.
Is there a possible way to fix it? (Probably not, I vaguely recall this being discussed before)

Why did you change the resolution in the first place?

Perhaps these problems are the reason why the menu resolution is always at 600x800 even when you change your in-game resolution to something else.

Maintaining the original aspect ratio (4:3) might help.
