How does kitbashing work?

Inexperienced modeller who wishes to kitbash the AT-AT pilot's front face mask onto the Clone Pilot's front helmet here. I have Blender and don't really know where to start with kitbashing; all other "tutorials" I've seen just say "attach X to Y" and don't seem to go into any more detail. What should I know?
