What's the problem with Blender, Maya or Max tutorials? The techniques are the same in any package.
And it'd be helpful to know which package you're searching for if not Blender, Maya or Max. Softimage?

Jonathan Williamson created a very good low poly character tutorial
HERE. The tutorial was done in Blender but can be easily translated to Softimage. You can apply these general techniques to any character regardless of shape or size.
