I saw the Wikipedia definition but I'm not sure how "Kitbashing or model bashing is a practice whereby a new scale model is created by taking pieces out of commercial kits." applies to skinning and modeling. I assume it it taking bits of other things and morphing them together in some sort of way...

It's not both skin and model kitbashes but rather skins as one entity and model kitbashes as another to describe what I posted.
And yes, your assumption is somewhat correct. By the way, I wasn't the first to ever use that term on this forum.
