Darth Vader vs Starkiller on the Death Star.

Starkiller vs PROXY on Raxus Prime where he turns into Darth Maul.

Gamma vs. E101 Beta mkII (Sonic Adventure) (0:22)
Gamma was really my first experience with a shooter-type game, and fighting the rebuilt form of the first boss was always so much fun. I actually went back and played this the other day, and even though the gameplay was a little bit dated, it was still pretty fun. Also, I remember this being the first boss to actually freeze my console (that charging explosion attack caused a freeze with the accompanying "BRRRRRRRRREEEEEEEEEEEEEE" noise :P)

Mario vs. Petey Piranha (Fight 1)
Way back when I completely sucked at video games I would often just replay the missions I had completed to pass the time. Petey's mission was one of them. As a result, I can now take this guy out in about 30 seconds. :P

Mario vs. Bowser (Fight 3)
Again, as I used to suck at video games getting here was nearly impossible for me, but then I did it one day. The lighting and music really made this fight interesting, but the fact that he actually got back up after the first spike bomb was a total "OHGODRUN" moment for me. Then he did the star thing.

I remember taking about a good hour to beat the Echo Base level for the first time because I was so afraid of the AT-ST. I hid/crouched by the doorway of the corridor that you come out of before the introduction scene and shot at the feet of the AT-ST every time it passed by on its circular pathway. It took nearly over ten passes before a single percent of damage was inflicted. Big waste of time now that I know to save my seeker missiles.

Was never a big fan of TFU's boss fights. The dev's idea of increasing difficulty was "Let's give the bosses infinite force power, ultimate combos, and make them able to block more force powers/lightsaber attacks more quickly every level."

Haha yeah, seeker missiles, pulses, all those weapons are coming back to me talking about this game lol

Who could forget the Disruptor? Pretty much generated a big [Diet Dr. Pepper] explosion.

And here's one I can probably add: the final battle with the Nightmare from LoZ: Link's Awakening. A boss that constantly changes form, forcing you to adapt to exploit its weakness each time. Plus, it changes into two bosses from A Link to the Past, which is a nice continuity nod.

I personally loved the final boss fight in Kingdom Hearts II (the final, story, boss). I mean, fighting a big king that's shooting weapons and randomly being thrown away, sailing through the air, kicking broken high rise buildings before they break you and then the awesome portal section.
