How do you access the menu in-game? Pressing 'Esc' does not seem to do it and I know pressing 'Pause/Break' pauses the game.

Nevermind, I found the function keys open various settings menus. A have a new question: I am using an Xbox 360 controller to play the game; I have all of the digital controls mapped, and the elevator and rudder controls are pre-mapped to my left control stick, but the ailerons do not seem to be pre-mapped to my controller's right control stick. How do I map it?
