What exactly are you wanting to do? Once we know that we can show you what's needed. Most everything you need to do can be done with the mod tools.

Just make a new project for that. Start new Project, name it something like ENDOR:EWOKS PWN ALL or what you deisre, make your custom sides, write the mission.lua to call the new sides and the stock Endor map, localize the names then munge, put it in the addon and test. You keep the basic endor map, and you also get you ewoks only.
EDIT: If you have the modtools, hex editing is only use for for applying multiple skins to models that lack the OverrideTexture commands, removing the Jetpacks from units, or massive changes to the shipped mission.lvl. Mac users need hexediting to just even do basic mods.
