it's possible... but you'd have them swinging it wierd (like a staff, and it would be pointing to the right from their right hand)
taking the rifle .msh and editting it a bit (putting in a bone lenghtwise, a new grip point, etc.) would allow you to either use it as a staff or as a 1-handed animation.

One problem I noticed about the ARC trooper is when the AI uses the minigun, he stops firing almost as soon as he starts, so he usually doesnt kill anyone. Can that be fixed?
I also have suggestions for more changes to the units, if you are interested.

the thing with the minigun is that AI are programmed to fire in bursts. and with the Minigun shooting 166 shots per second, he fires for about 1/10 of a second.
which means that if he hits you, you're dead, but if he misses, he's dead.

If you give him unlimited ammo he wont fire in bursts (you can still have clips though)

I looked at the stormtrooper screenies on the swbffiles link and it seems you need a better model (or did you change it already?) of the T21 blaster cannon. I think t551t551? has created a better model which is in rise of the empire #5

But I am considering using t551's if I can find it.

L-5-R's knife doesn't have any firepoints, unfortunately, so it doesn't really work.

I've seen it used as a throwing knife, though - make an ODF with "shell" as the class label (so it follows a parabolic arc). Or, you could have infinite ammo, no shot delay, and very poor range. It'd look somewhat like a stab attack.
Oh, and where'd you get that disruptor model?
